This is a recipe of fishtail with vegetables and a nice sauce. It's simple to prepare and should be very good with all the spices and herbs being added to the dish.

Monk fish tail with Andalusian sauce

Ingredients

 1 monkfish tail of 1kg
 2 large carrots in rings
 A large can of tomato paste
 1 onion, minced
 2 tbsp olive oil
 1 Greek-style black olive jar
 150 ml white port
 150 ml water
 Salt, pepper
 Provence herbs

Directions

Put the instant pot in mode browning

Cut the monkfish tail

Brown the pieces of tails in a little oil on all sides

Add all the ingredients

Switch the instant pot to pressurized cooking 10min
