Do you like rabbits? If it's affirmative, you could try that fancy terrine of rabbit with plenty of good ingredients. Served as a first course, it will get the approval of your guests.

Terrine of rabbit with an old fashion taste

Ingredients

 500 g sausage meat
 500 g boneless and chopped rabbit
 250 g rabbit liver
 1 onion chopped
 1 clove garlic chopped
 Salt, pepper
 Chili pimento to your taste
 Bay leaf parsley, thyme
 100 ml of Cognac
 1 handful of peeled hazelnuts

Directions

Put the instant pot in browning mode

Fry the rabbit liver, salt, pepper, thyme, and bay leaf

Stop the browning mode

Pour in the cognac and close the turned off instant pot for 15 minutes

Mix the sausage meat, the chopped rabbit the onion, parsley

Mix the stuffing with the marinated liver

Add the hazelnuts and mix well

Pour into a mold and put in the steam basket with 250ml of water in the tank

Put the cooking under pressure 40min

At the end of cooking, open the instant pot and let cool for 30min

If necessary remove the water from the bowl

Put in the fridge 12h minimum

To serve in the mold or take it out
