Let’s try another dish of stuff eggplants. This is a recipe that mix up meat, rice, special Lebanese spices to give it a unique taste. It will take a little time to fix it but your guest won’t be disappointed.

Ingredients

 1 kg small eggplants
 400 g ground meat
 70 g rice
 700 g crushed tomatoes
 1 large onion, diced
 2 cloves of garlic, crushed
 1 tbsp tomato concentrate
 ½ tbsp cinnamon
 1 tbsp Lebanese spices
 Salt, pepper

Directions

Soak the rice for a few minutes in warm water

Prepare the stuffing by mixing the meat, drained rice, salt, pepper, and spices

Prepare the eggplants by removing the ends and emptying them (keep the flesh)

Stuff the eggplants with a mixture of meat, rice, vegetables and, spices

Put the instant pot in "brown" mode

Add the onion and garlic

Add the tomatoes, salt, and pepper

Add the stuff eggplants

Add water until the first row of eggplants are covered

Switch the instant pot in cooking mode 9min
