Often, the red cabbage is served with chestnut; they go well together. In that recipe, you cook the pork roast between layers or red cabbage and some chestnut. It will be a good sturdy dish.

Pork fillet mignon, red cabbage and chestnut

Ingredients

 1 large pork tenderloin between 800g and 1kg
 2 sliced onions
 1 red cabbage
 1 large box of whole chestnuts
 1 sprig of thyme
 1 rosemary sprig
 2 bay leaves
 4 tbsp vinegar
 500 ml water
 Salt, pepper
 3 tbsp olive oil

Directions

Put the instant pot in mode browning

Brown the meat in a little oil on all sides

Remove the meat and set aside

Put the bacon and onions back in the frying pan with vinegar

Put the half of the cabbage

Put the meat Back

Add the rest of the cabbage

Salt, pepper

Add water, thyme, bay leaf, and rosemary

Add the chestnuts

Put the instant pot in cooking mode under pressure 45min
