do you have an abundance of summer vegetables? In that recipe, you can add to the pasta some Zucchinis, eggplants, and tomatoes. Sprinkle with cheese and pumpkin seeds will confer a really good taste and look to the dish.

Ingredients

 360 g pasta of your choice
 1 eggplant in cubes
 3 zucchini in cubes
 3 tomatoes in cubes
 2 tbsp pumpkin seeds
  Olive oil
 500 ml water
 Parmesan or gruyere cheese
 Salt

Directions

Put the instant pot in mode browning

Brown the eggplant 5min in a little oil

Add the zucchini

Brown 5min more

Add the tomato

Add the pasta and water

Salt

Put the instant pot in mode under pressure for half the time indicated on the package of pasta

Sprinkle with cheese and pumpkin seeds when ready to serve
