Monk fish in American style

This is an interesting way to prepare your fish. After cooking it, you will briefly blaze it with some Cognac. The preparation of the fish will certainly impress your friend.

Ingredients

 2 fillets of Monk fish
 1 minced shallot
 1 cup white wine
 1 small amount of cognac
 1 tbsp tomato paste
  Butter
 Salt, pepper
 1 bay leaf
 1 tbsp flour

Directions

Put the monkfish fillets in the oven 5min so that they lose their excess of water

Wipe and flour the fillets

Put the instant pot in mode browning

Brown the shallot in a little butter

Brown the fish

Add the cognac

Blaze

Put the instant pot in pressure cooking mode 15min
