Do you have cauliflower in the fridge? Why not try that fancy mash with all kind of trimmings? Once the mash is finished, you can add up whatever you want to enhance the mash.

Mashed cauliflower with crisp bacon and its trimmings

Ingredients

 1 cauliflower tops
 400 ml milk
 1 large potato in pieces
 30 ml butter
 1 small onion,
 Salt, pepper
 1 carrot cut into thin slices
 2 sprigs of wild garlic, minced
 8 slices of bacon

Directions

Put the instant pot in mode browning

Cut the bacon slices in half and brown them without adding fat

Let them brown them well

Remove them from the vat and set aside

Put the cauliflower, potato, onion, and butter in the instant pot (without rinsing the vat)

Pour in the milk

Put the instant pot in pressure cooking 8min

At the end of cooking, mix

Salt, pepper

Serve the mash in a plate with 3 small bowls (carrot, bacon, wild garlic)
