Head cheese

If you have time, you may want to try preparing a head cheese. It consists of mixing a cooked pork head with spices and herbs. It's served cold as a first course or light meal.

Ingredients

 ½ head of pork
 1 large onion pricked with cloves
 1 bunch of parsley
 4 cloves of garlic
 2 small onions
 2 carrots
 1 stick of celery
 1 small bunch of thyme and bay leaves tied
 Salt and pepper

Directions

In the instant pot put the split pork head

Add the stung onion, celery, carrots, thyme and bay leaf

Salt, pepper

Cover with water

Put the instant pot in pressure cooking mode 1h30

Chop the parsley, small onions, and garlic

At the end of cooking, remove all the meat around the bones

Mix the meat in a food processor

Mix with the parsley mixture and a ladle of the cooked broth

Salt, pepper

In a bowl, put a small amount of broth in, add the meat mixture

Decorate with some cooking vegetables

Pour a little broth over

Cover and put in the fridge at least 6h
