Fennel soup with Parmesan

Yields4 Servings

Ingredients

 2 fennels
 2 cloves of garlic crushed
 4 tbsp of parmesan cheese
 Olive oil
 Salt, pepper
 A few pine nuts for decoration

Directions

Remove the hardest outer part of the fennel including the branches and cut the fennel into small pieces

Put the instant pot in browning mode

Brown the garlic in olive oil

Add the fennel and sweat for 1 to 2 minutes

Cover with water

Switch the instant pot to pressure cooking mode 8min

Mix out of the instant pot

Switch to warming mode

Add the Parmesan cheese

Serve with the pine nuts and a drizzle of olive oil for decoration
