Eggplant doesn't have much taste by itself so you need plenty of other ingredients and spices with it. The following salad comprises of cooked eggplant with cheese, tomatoes, and lemon. Anchovies also go very well with eggplant.

Eggplant salad with honey and goat cheese

Ingredients

 4 eggplants in pieces
 3 tbsp olive oil
 6 crushed garlic cloves
 100 ml water
 2 tbsp honey
 2 tbsp sweet soy sauce
 Pepper
 3 pieces of goat cheese
 6 dried tomatoes in pieces
 Coriander
 Lemon juice

Directions

Put the instant pot in browning mode

Fry in oil, eggplant, and garlic

Add water, honey, soy sauce, and pepper

Put the instant pot in pressure cooking 7min

Drain and set aside in a bowl

When ready to serve, add the goat, tomato, lemon juice, and coriander
