Here, you mix vegetables with semolina. It will be a good recipe for supper or a vegetarian. A lot of spices and herbs will make the difference in that dish.

Couscous without meat

Ingredients

 1 eggplant in cubes
 Coriander
 2 zucchini in half rounds
 1 onion, minced
 2 tbsp cumin
 150 g canned tomato crush
 2 tbsp olive oil
 2 tbsp paprika
 250 g chickpeas
 400 g semolina
 500 ml water
 1 sprig of fennel in pieces

Directions

Set the instant pot in mode browning

Brown onion and coriander 1min

Add all ingredients except semolina

Switch the instant pot to pressure cooking 7min

At the end of cooking, put the semolina in the sauce

Wait 5min while it swells in the sauce
