Chicken Gaston Gerard

Ingredients

 1.20 kg chicken of 2kg in pieces (if there are no whites)
 400 ml dry white wine
 1 tbsp cornstarch
  Oil
 1 sprig of thyme
 1 minced onion
 150 g grated county cheese
 1 tbsp mustard
 200 g thick cream
 Salt, pepper

Directions

Put the instant pot in mode browning

Fry the chicken on all sides for 15 minutes

Salt, pepper

Add the thyme and white wine

Put the chicken in a dish suitable for the oven

Put it in the oven at 100°C

During this time pass the sauce through a sieve and dilute the cornstarch in it

Put the sauce back into the instant pot

Always in mode browning, add the county cheese and mix until it has melted

Add the mustard and cream

Cook until it reduces the liquid

Cover the chicken with the sauce

Put in the oven over the grill 10min
