Risotto also makes a good vegetarian dish. You can add all kind of ingredients to enrich the rice. In the following recipe, cabbage, malted yeast, and almond paste are added to the dish.

Vegetarian risotto with romanesco cabbage from Sabrina

Ingredients

 380 g rice for risotto
 ½ romanesco cabbage in piece
 2 shallots, minced
 250 ml white wine
 ½ vegetable bouillon cube without salt
 ½ vegetable bouillon cube with salt
 Olive oil
 Water
 60 g almond and pistachio paste
 5 tbsp malted yeast

Directions

Put the instant pot in mode browning

Brown the Romanesco cabbage and shallot in olive oil

Add the rice

When the rice becomes translucent, add the white wine

Let reduce a little

Add the cube and cover with water

Switch to pressure mode for 15 minutes

Add the almond and pistachio paste and malted yeast

Mix well
