Here is a complete meal to feed your family. You take some zucchini and mix them with bacon, quinoa, and cheese. It is going to be a healthy dish and good tasting as well

 3 small zucchini peeled and sliced
 Chop bacon
 Crushed garlic
 Onion sliced
 1 ½ glasses of quinoa and bulgur mixture
 Tomato sauce
 ½ chicken broth cube
 2 cups of water
 Mozzarella cut into pieces

Set the instant pot to mode browning

Sauté the zucchinis

Put everything in the tank except the mozzarella

Put the instant pot in pressure cooking mode 8min

At the end of the cooking time put the mozzarella

Put the instant pot back in quick cooking 2min
