Do you want to put a little exotism in your next meal? You may try that Northern African recipe mixing eggs with vegetables. It is a good, healthy dish full of vegetables and flavors.

Vegetables in a Shakshouka style

 1 medium can of sliced button mushrooms
 5 g coriander
 50 g frozen spinach leaves
 4 eggs
 1 sliced onion
 3 large handfuls of peppers 3 colours in frozen strips
 10 cherry tomatoes
 1 tbsp olive oil
 1 tbsp paprika
 Salt, pepper

Put the instant pot in mode browning

Fry in oil, onion, and peppers

Add coriander, spinach, and tomatoes

Leave in brown mode 7min, stirring regularly

Add mushrooms

Break eggs and put them on vegetables

Salt, pepper and add paprika

Leave the brown mode 5min more, gently mixing to mix the egg and vegetables a little.
