This is a dish with a mix up of exotism and regular ingredients. The preparation will be shared between rice, shrimps, leeks and coconut milk. The combination should give an excellent dish.

 250 ml rice for risotto
 1 onion, minced
 2 leeks, minced
 2 handfuls of peeled shrimp, cut into strips
 200 ml coconut milk
 Salt, pepper
 200 ml chicken broth

Put the instant pot in mode browning

Fry the onion and leeks in olive oil

Add the rice and shrimps

Fry until the rice becomes translucent

Add the coconut milk and chicken broth

Salt, pepper

Put the instant pot in pressure mode 10min

At the end of cooking, stir and leave to keep warm if there is water left
