Very often, risotto is sprinkled with the special cheese parmesan before serving. It really enhances a lot the dish giving a better taste and texture.

Risotto with chicken, zucchinis and bacon

 500 g of chicken pieces
 150 g of bacon
 2 sliced shallots
 2 zucchinis
 260 g of rice for risotto
 750 ml of broth
 200 ml of white wine
 100 g of parmesan

Put the instant pot in mode browning

Fry the chicken and bacon with the shallot

Add the rice

Fry until the rice becomes translucent

Add the zucchini, wine, and broth

Put the instant pot in pressure cooking mode 20min

Put the parmesan just before serving

You can add a little fresh cream at the end of cooking for an even more creamy risotto
