 2 diced eggplants
 3 diced tomatoes
 150 g raw rice
 1 ball of mozzarella in pieces
  Provence herbs
 Salt, pepper
 1 tsp olive oil
 150 ml Mediterranean-style vegetable broth

Put the instant pot in mode browning

Brown the eggplant in a drizzle of oil

Add the tomatoes, mozzarella, and rice

Add the broth

Salt, pepper and put the Provence herbs
