Rice cocotte with cod

This is a complete dish of seafood for supper in a twinkle of an eye. Not quite but still fairly quick to make with some cod, rice, and vegetables. A few good spices to flavor well the dish.

 4 cod steak
 250 g long rice
 1 onion, minced
 2 tomatoes, seeded and chopped
 1 green pepper, coarsely sliced
 6 dried tomato
 2 cloves of garlic, chopped
 1 tbsp fish stock
 20 g olive oil
 Thyme
 Saffron powder
 Salt pepper

Put the instant pot in mode browning

Brown the onion, garlic, and pepper in the oil

Add all the tomatoes, saffron, thyme.

Salt and pepper

Brown for 3min more

Put rice in the bowl and mix

Put fish on top the rice

Cover with water up to the rice

Add the fish stock

Switch the instant pot to pressure cooking 6min

At the end of cooking, if there is too much water, switch the instant pot to brown for a few minutes.
