Pineapple can also make good jam. In that recipe, you mix pineapple with some vanilla and lemon juice to enhance the taste. Use some jam sugar to help with the thickening of the jam.

Pineapple jam with vanilla

 1 pineapple, diced
 700 g jam sugar
 1 vanilla pod cut lengthwise
 1 lemon juice
 2 pinch cinnamon
 60 ml rum
 water

In a closed dish put all the ingredients

Let macerate for 1 hour

Remove the pod and put the mixture in the tank of the instant pot

Add the water

Switch the instant pot to brown and stir regularly

At the end of the preheating, stop the browning mode and cook under pressure 12min

At the end of the cooking, stir

Put in browning mode 2min

Pour into a pot and let cool 24h
