 300 g pasta of your choice (no quick cooking)
 1 eggplant, diced
 3 zucchinis, diced
 Olive oil
 Parmesan
 500 ml water
 Salt

Put the instant pot in mode browning

Brown the eggplant 5min

Add the zucchinis and brown 5min more

Add the pasta and water

Salt

Switch the instant pot to pressure cooking 5min

At the end of cooking, empty the water if necessary

Serve in a plate with parmesan cheese
