Meatball, cheese and eggplants

This is an interesting way of presenting meatballs. You stuff them with a small ball of mozzarella and fix some eggplant to accompany it. That dish will cause a delightful surprise for sure; try it on your family.

Meatball, cheese and eggplants

 500 g minced meat
 3 eggplants in large pieces
 4 minced garlic cloves
 16 small mozzarella balls
 2 tsp paprika
 A little olive oil
 1 tsp cumin
 1 tbsp ginger
 1 tsp coriander powder
 Salt, pepper
 50 ml water

In the instant pot bowl, put the eggplant, garlic, 1 tbsp paprika and, water salt, pepper

Pressurize the instant pot 8 min

In a bowl, mix the meat, cumin, coriander, 1 tbsp. paprika, ginger, salt and, pepper

Make 16 balls and flatten them with the palm of your hand

Put a mozzarella ball on top and close the ball

At the end of cooking the eggplants, take them out of the bowl (drain them if necessary) and set aside

Pass the instant pot in a browning mode

Brown the cheese meatballs for 5min.
