This is a good way to use eggplant. You cook it with some good spices, pass it through a mixer and spread it on some bread. It is going to taste very good and everybody should like it.

Eggplant caviar

 600 g eggplant cut into small cubes
 15 g garlic
 100 g minced onion
 1 tbsp basil
 3 olive oil
 100 ml water
 Salt, pepper

Put all the ingredients in the bowl

Put instant pot in quick cooking mode 7min

Mix outside of the bowl

Spread eggplant paste on toasted bread
