How about a handful of these little sausages called chipolatas? In that recipe, they will be mixed up with tomatoes and potatoes for the main part.

 8 chipolata sausages cut into 4
 2 cans of chopped tomatoes
 5 large potatoes in large chunks
 1 chopped onions
 1 pepper in strips
  Salt, pepper
 Pimento
 150 ml water
 Fat

Put the instant pot in browning mode

Brown the chipolata in a little oil or butter

Add the potatoes, onions, and peppers

Let it brown for a few minutes

Add the tomato, water, and remaining ingredients

Switch the instant pot to pressure cooking mode 20min
