Here is a good combination of chicken thighs with pumpkin. It is a good winter vegetable and you can mix it up with about anything. It should be a really good and healthy meal.

 2 chicken legs
 1 can of mushrooms
 450 g coarse grated pumpkins
 1 small onion
 A little tomato paste
  Veal stock

Put the instant pot in mode browning

Brown the chicken legs and onion for 4min

Add the mushrooms

Leave 2 - 3 minutes

Put the tomato paste and veal stock

Add water and stir

Add the pumpkin

Put the instant pot in pressure cooking mode 25min
