This is going to be an interesting preparation. It could be used as a soup, dish or dessert. It consists of cooked carrots with a lot of spices. It will be mixed with grapefruit juice before being served cold.

Carrots and grapefruits cold soup

 1 kg of carrots in rings
 3 pink grapefruits juice
 2 untreated oranges juice + the zest
 1 small bunch of fresh mint chopped
 1 clove
 1 pinch of cinnamon
 1 pinch of vanilla sugar
 1 pinch of cardamom powder

Put the carrots in the steam basket than in the tank with 200ml of water

Put the instant pot in cooking under pressure 10min

At the end of cooking, empty the vat

Put the carrots in the vat with the zest and juice of the oranges, mint, cloves, cinnamon, vanilla sugar and cardamom

Mix everything with a little cooking water if necessary to obtain a slightly liquid texture

Put the instant pot in pressure cooking 3mins

At the end of cooking, put in a bowl and leave at least 4 hours in the refrigerator

Mix with the grapefruit juice before serving
