The tongue in itself is not very tasty. It is why it's important to prepare a really tasty sauce to cover the meat. In that recipe, you use some hot mustard and pickles.

Beef tongue and Patricia's seasoned sauce

 1 beef tongue in big peices
 Salt, pepper
 SAUCE
 1 onion
 1 small can of tomato paste
 2 tbsp strong mustard
 2 tbsp flour
 900 ml broth with 1 glass of white wine and 3 caps of Madeira (optional)
 A few pickles
 1 handfull of small white onions

Put the tongue in the tank of the instant pot

Salt and pepper

Put the instant pot in pressure cooking mode 40 minutes

PREPARATION OF THE SAUCE

In the mode browning, fry the onions

Add the concentrate, mustard, and mix

Put the flour

Once mixed well add the broth

Salt and pepper

Put the instant pot in cooking mode under pressure 3min

Once finished put the pickles and onions and the tongue

Put the instant pot in warming mode so that the tongue warms up
